Long before retiring as an Innkeeper, Marion Yadon, Gourmet Chef
and co-founder of Canyon Villa, compiled a collection of her favorite
recipes in a book, Red Rocks and Cinnamon Rolls.
Years later, guests of Canyon Villa continue to be delighted by
favorites such as Baked Butter Apples with Granola and Cream, Blackberry
Buckwheat Pancakes, Orange Grand Marnier French Toast, Tea-Time
Pecan Tassies and, of course, Cinnamon Rolls.
The popular cookbook was produced by "Inn Words and Pictures" and edited
by Gail Greco. Ms Greco is the star of "The Country Inn", a PBS cooking television
series on which Canyon Villa has been featured.

Featured Canyon Villa Recipe
"Sweet Onion Cheese Dip"
3 large sweet onions coarsely chopped
1 garlic clove minced
2 T butter
2 cups shredded Swiss cheese
1 cup mayo
1/2 t hot sauce
1/2 cup shredded parmesan cheese
Saute onions and garlic until tender. Remove from heat. Add cheese,
mayo and hot sauce. Transfer to baking dish. Bake at 350 degrees
for 20 minutes until lightly browned. Serve with crackers. Makes
5 cups.
(NOTE...This recipe is generally enough for us to serve as many
as 22 guests during our nightly appetizer hour.....a BIG favorite!)
